Witlof garden salad

Witlof is related to radicchio, and has similar crisp leaves, tightly packed and white in colour, with pale green tips.

  • ½ head green leaf lettuce, leaves torn
  • ½ head red leaf lettuce, leaves torn
  • 1 red witlof, leaves separated
  • 1 white witlof, leaves separated
  • 1 Lebanese cucumber, cut in half and thinly sliced
  • 6 radishes, thinly sliced
  • 50g walnuts, toasted

Dressing

  • 2 tablespoons lemon juice
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon Dijon mustard
  • ½ teaspoon caster sugar

Layer the lettuce and witlof on a platter and scatter cucumber and radishes on top. Whisk the dressing ingredients in a small bowl and season with salt and pepper. Drizzle over the salad and sprinkle with walnuts. Serve with turkey and pickled peaches.
